Smoked Salmon and Scrambled Eggs on Rye Toast

The delicious breakfast meal of smoked salmon and scrambled eggs on rye bread is definitely a very popular combination. You will get loads of omega 3 fats from the salmon to nourish your brain and body. It is a very quick and easy breakfast option, especially if you don't have much time on hand. Ingredients

  • 2 Tablespoons olive oil
  • 8 large eggs, beaten
  • 4 slices of rye bread
  • 100 g smoked salmon, torn or chopped into smaller pieces
  • 1 teaspoon of chives, chopped
  • freshly ground black pepper

Method

  1. Heat the olive oil in a saucepan over medium heat and add the eggs to the saucepan

  2. Get the toaster ready and toast the bread

  3. Slowly stir the eggs with a wooden spoon or spatula, scraping along the base of the pan as the eggs cook to keep moving them and prevent them from sticking

  4. Add the chopped chives and gently stir through

  5. Remove from the heat as soon as the eggs are set ( or cook them a bit more if you like more cooked scrambled eggs)

  6. Gently fold in the salmon pieces

  7. Put a piece of rye bread on each plate, butter and place the portion of eggs and salmon on top

  8. Serve with chopped cherry tomatoes (fresh or grilled) on the side or ½ an avocado pear

  9. Garnish with chopped chives, 2 chive sprigs or any eatable flower
