Healthy Granola, Yogurt and Fruit Parfait

The healthy granola, yogurt and fruit parfait comes a long way. As chef at Augusta Kleinbosch Guest Farm we used to have this lovely option on our breakfast menu. It was a hit. Most ordered item on the menu I would say. Our Wellington Wine Walk Groups used to order this to be healthy for their 16 km walk for the day. We used to serve this with a delicious banana loaf muffin, apple, ginger and cinnamon muffin, or health muffin on the side.

Ingredients

  • 12 Tablespoons of plain double cream yogurt - 6 Tbsp altogether per parfait glass
  • 6 Tablespoons granola(muesli) - 3 Tbsp per parfait glass
  • FRUITS: 1 kiwi, peeled and cut into small blocks
  • 4 strawberries, cut in quarters and then into small blocks
  • 1 banana, peeled and cut in half rings
  • half an apple, peeled or unpeeled, cut into blocks
  • 6 raspberries
  • 12 loose blueberries
  • 12 loose gooseberries
  • 1 peach, cut into small blocks- divide the fruits into four portions, two portions per parfait
  • silvered almonds
  • honey for drizzling
  • NOTE: Use a deep glass bowl, to cover all the layers

Method

  1. Start by preparing the fruits and divide them in 4 portions - 2 portions per parfait

  2. Leave the raspberries for the garnish part

  3. Take 1 portion of fruits per parfait and layer this in the bottom of the glass

  4. Layer each parfait now with 3 Tablespoons of plain yogurt

  5. Then 3 Tablespoons of granola

  6. Followed by another layer of 3 Tablespoons of plain yogurt

  7. Followed by another portion of fruits

  8. Last add 1 teaspoon of plain yogurt per parfait, place the silvered almonds on top, add the 3 raspberries per parfait and drizzle with honey

  9. Serve with a healthy muffin on the side if you are looking for a breakfast to last you for a couple of hours more
