Roast Butternut with Sage

Roast butternut with sage is a delicious side dish for any occasion, but to recommend special occasions it would be Christmas to start with, as well as Mothers Day and Fathers Day. This delicious butternut with fresh sage leaves give a beautiful warm colour for the Christmas table. It is a traditional side dish which I think will never go out of fashion. This will definitely spice up the Christmas table with colour. It will go delicious as a side dish with Roast Turkey, Roast Lamb or Roast Chicken.

Ingredients

  • 900 g butternut, peeled and cut into chunks
  • 2 Tablespoons olive oil
  • 6-8 sage leaves
  • 2 Tablespoons butter
  • salt and black pepper to taste

Method

  1. Peel the butternut and cut them into rounds, then in ¼ chunks

  2. Arrange them on a baking tray, lined with foil

  3. Sprinkle the olive oil over, as well as the salt and pepper

  4. Arrange the sage leaves in between and cover with foil

  5. Roast until soft for about 45 minutes to 1 hour in a pre-heated oven, but keep an eye to see when it it soft

  6. Remove and add the butter to melt and serve

  7. TIP:Sprinkle some goats cheese over for a milky flavour to add in
