Honey Glazed Carrots

Honey glazed carrots with cumin seeds and star anise is a delicious side dish for any occasion, but to recommend special occasions it would be Christmas to start with, as well as Mothers Day and Fathers Day. This delicious carrots give a beautiful warm colour for the Christmas table. It is a traditional side dish which I think will never go out of fashion. This will definitely spice up the Christmas table with colour. It will go delicious as a side dish with Roast Turkey, Roast Lamb or Roast Chicken.

Ingredients

  • 1 packet of carrots(300g), cut in ¼ pieces or baby carrots
  • 2 Tablespoons butter
  • 2 cloves garlic, peeled and chopped
  • 1 Tablespoon cumin seeds
  • 2 star anise, salt and pepper to taste
  • 2 Tablespoons honey

Method

  1. In a large pot, bring water to a boil and add a pinch of salt

  2. Add the carrots and blanche for about 5 minutes until soft

  3. Remove from the boiling water and add directly in a stainless steel bowl of water with ice-cubes

  4. This step will prevent the carrots to cook further

  5. Leave for about 2-3 minutes

  6. Remove the carrots from the ice water and pat dry on kitchen towel

  7. Heat the butter in the frying pan and fry the carrots and garlic lightly, adding the cumin seeds and the star anise

  8. Add the honey, give it a good toss to let the honey melt in and season
