Home-made Cheddar Cheese Sauce
This home-made Cheddar cheese sauce is a delicious sauce if you do not feel like buying ready made sauces in the supermarket. This delicious home-made Cheddar cheese sauce comes a long way with me. I used to make this sauce with macaroni noodles and transformed it into a kiddies macaroni cheese meal when I had to make kiddies meals for the guests. But recently we became addicted to chicken schnitzel with home-made Cheddar cheese sauce. Tonight we will try it with our home-made beef hamburger and chippies. The little bit of mustard in this home-made cheese sauce gives it some extra flavour, something I will always remember from our late lecturer chef Steve Davison(British) from my chef school days at Warwick Chef School.

Ingredients
- 3 Tablespoons butter
- 3 Tablespoons flour
- 500 ml milk
- 180 g grated Cheddar cheese
- 1 ml German mustard (or Dijon)
- Salt and pepper to taste
Method

Melt the butter over low heat in a saucepan

Add the flour and whisk very well for the butter and flour to form a Roux

Add the milk slowly, whisking so that no lumps form

Add all the milk

If lumps do form, use an electric stick/hand blender to make it smooth and place back on the heat to cook further

Add the cheddar cheese and whisk again, ensuring all the cheese are well incorporated

Add the mustard and give another stir

Season with salt and pepper to taste

Recipe makes about 600 ml of sauce
