Overnight Paprika Chicken Marinade

I am very fond of this recipe. Wonderful memories from my early cheffing days as a young chef in my first job. As the establishment is a 4 star property, our menu's were very fancy and definitely cuisine. We used to make this overnight paprika  chicken marinade for the char–grilled chicken breast fillet, cut length ways and marinaded overnight in this delicious marinade before char-grilling it. Afterwards we would wrap it in parma ham or black forest ham and then cook it further a few minutes in the oven. It went with baby sauteéd parsley potatoes, green beans and asparagus, steamed of course, and rounded off with a lovely tarragon cream sauce.But in our household, this marinade get used for our braai chicken. For lovely braai salads, try the Beetroot Side Salad for the Braai or the Cool Cucumber Salad.

Ingredients

  • 125 ml vegetable oil
  • 4 Tablespoons sour cream or double cream yogurt
  • 2 Tablespoons lemon juice
  • 1 Tablespoon sugar
  • 1 Tablespoon sweet paprika
  • ½ teaspoon chilli powder
  • ¼ teaspoon salt

Method

  1. Combine all ingredients and whisk the marinade well

  2. Use a Tupperware container with a lid

  3. Dip the chicken pieces in the marinade and cover well

  4. Leave overnight and remember to turn the container frequently to ensure the marinade coated the pieces well

  5. Use when ready
