Feta, Watermelon and Pumpkin Seed Salad

The feta, watermelon and pumpkin seed salad is definitely delicious in that hot summer months! Enjoy the feta, watermelon and pumpkin seed salad on your veranda table for a lovely quick lunch or serve it to the whole family and kids when they are playing in the pool in the summer month school holiday. It is perfect to serve at a Barbecue or eaten individually by the plate. It is also a great salad idea on the Christmas Table apart from the Roast Lamb or Roast Chicken. Watermelon has a lot of health benefits.The colourful pink that combines with the salad is lovely and once again a great idea to use on a buffet table for a summer bash! Pumpkin seeds are also a great way of getting more protein in your diet. Toasting it slightly makes the salad very tasty. The basil leaves complement this salad and the green adds colour to the plating as well to make this feta, watermelon and pumpkin salad great feast on the eye. Make little melon ball shapes if you wish to change the watermelon blocks to a newer version of watermelon! This is a perfect starter for a small 3-course dinner or a larger bowl for a delicious lunch. This feta, watermelon and pumpkin seed salad is a bit unusual but a lovely summer combination. Or add it to a lovely picnic basket item and enjoy it on the lawn underneath your favourite tree.

Ingredients

  • 4 Tablespoons pumpkin seeds, toasted
  • ½ watermelon, shaped into melon balls or small blocks
  • 200 g feta cheese
  • freshly ground black pepper
  • handful fresh basil leaves
  • olive oil to drizzle

Method

  1. Lightly toast the pumpkin seeds in a dry frying pan or oven, until they start to pop.Leave to cool

  2. Place the shaped watermelon pieces in a bowl or on a plate

  3. Add a few basil leaves

  4. Crumble the feta cheese on top

  5. Sprinkle with black peppercorns to taste

  6. Sprinkle with the toasted pumpkin seeds and garnish with a beautiful colour eatable flower

  7. Drizzle with olive oil
