In a large pot, bring water to a boil and add a pinch of salt.
Add the brussels sprouts and blanche for about 5-8 minutes until soft.
Remove from the boiling water and add directly in a stainless steel bowl of water with ice-cubes.
This step will prevent the brussels sprouts to cook further as well as to loose colour.
In the mean time, fry the bacon in the butter until crispy and remove, but leave the pan to use again.
Remove the brussels sprouts from the ice water and pat dry on kitchen towel.
Heat the pan from the bacon again and fry the brussels sprouts lightly, then add the bacon again.
Fry for 2 minutes and place in serving dish.
