Breakfast Waffle with Seasonal Fruits
When I was small, I begged my mom to buy us a waffle machine! And with great luck, she did! I remember being thrilled about it and used to help on Saturday afternoons to make waffles for us as a family. It is with good memories that I share this lovely breakfast waffle with seasonal fruits recipe with you. On the fruits side - you can use any seasonal fruits available. A lovely mixture of lots of shapes and colours will make it look very beautiful. Pansie flowers on top will make it look even prettier! Ingredients
- 2 eggs - separated
- 4 cups oil
- 2 Tablespoons sugar
- 1 teaspoon salt
- 1¾ cups flour
- 1¾ cups milk
- 4 teaspoons baking powder
- FRUITS: 3 kiwi, peeled and cut into small blocks
- 16 strawberries, cut in quarters and then into small blocks
- 3 bananas, peeled and cut in half rings
- 2 apples, peeled or unpeeled, cut into blocks
- 24 raspberries
- ½-1 punnet blueberries
- ½-1 punnet gooseberries
- 3 peaches, cut into small blocks
- honey or maple syrup for drizzling
- OPTIONAL: papayas, figs, mango's or raspberries can be used - the more colourful, the better
Method

Start by preparing the fruits and keep them aside

For preparing the waffles: Beat the egg yolks, milk and oil together

Add the the flour, sugar, salt and baking powder

Mix well

In a separate bowl, beat the egg whites until stiff and fold into the egg yolk and flour mixture

Spray your waffle machine with spray and cook before making the first waffle and wait until the light are off to start

Ladle a spoon full of batter into the waffle machine and spread evenly before closing the lid

Continue making the waffles until you have no batter left

Divide the fruits into 8 portions, add on top and drizzle with syrup or maple syrup to your liking
