Healthy Nut and Seed Muesli
This is a healthy nut and seed muesli we used to make at my very first chef job, at the lovely Blue Gum Country Estate. We had a large buffet table which consisted of various buffet– style breakfast foods, suited for everyone(even the fussy ones, wink!)This is a very popular quick breakfast meal if you are an early morning runner or going to the gym before work. You can even take it with to work, match it with an individual small yogurt and whoop you have a small bite somewhere in between your busy day at work. With all the delicious nuts, seeds and dried fruits it is definitely very good for your health. Quick to make and easy to store. Basically most of the ingredients you just toss in an oven try, heat the syrup and vanilla, pour it over, give it a good toss and bake. And Bob’s your uncle!

Ingredients
- 100 g puffed corn
- 150 g rolled oats
- 1 cup pecan or walnuts, roughly chopped
- 1 cup macadamia or mixed nuts, roughly chopped
- 100 g flaked coconut
- a 200 g mixture of seeds consisting of linseed, sunflower seeds and almonds
- 100 g dried apples, chopped
- 200 g dried apricots, chopped
- ½ Cup maple syrup
- 1 teaspoon vanilla essence

Preheat the oven to 180 ° Celsius

Place all the ingredients, including the fruits in a large oven tray

Put the maple syrup and vanilla essence in a glass bowl and microwave for about 5 minutes until melted or place in a saucepan and melt over low heat

Pour the maple syrup melted mixture over the ingredients in the oven tray, toss to give it a good mix

Bake for about 20 minutes turning frequently(depending on the strength of your oven it could be more or less in baking time
