Glazed ham

Every Christmas table need a glazed ham. It is very popular in the United States at Thanksgiving celebrations. The lovely glaze makes this ham absolutely delicious. While cooking at various establishments, we used to always have a glazed ham on our christmas menu. You must serve some form of mustard with the glazed ham. Wholegrain mustard is my personal favourite. .In South-Africa we also make roast turkey for Christmas, or sometimes roast lamb or roast chicken.  We also like having trifle as dessert on our Christmas table and the table normally consist of a buffet selection, either from starter to dessert or if not, then at least the main courses. 
A sticky, sweet brown sugar and honey glazed ham roast perfect for a holiday feast.

Ingredients

Ham

  • 1.5 kg uncooked, boneless ham
  • 2 celery ribs
  • 2 carrots, peeled and cut in chunks
  • 1 onion, peeled and cut in chunks
  • 3 Tablespoons stock
  • 1 bay leaf
  • 1 teaspoon black peppercorns
  • 5 whole cloves
  • 2 Cups red wine, beer or ginger beer
  • ½ cup soft brown sugar

Glaze

  • 4 Tablespoon wholegrain mustard
  • ½ cup soft brown sugar

Method

Ham

  1. Place an upside down saucer in a deep heavy-based saucepan and place the meat on top

  2. Add the rest of the ham ingredients in the pot and pour enough water over the meat to coat it

  3. Place the lid on top, bring to the boil and lower the heat

  4. Let it simmer for 1¼ hours

  5. Remove the saucepan from the heat and immediately wrap it in a sheet of newspaper

  6. Wrap a blanket, duvet or sleeping bag around

  7. Place in a cardboard box and keep aside for 6 hours(If you use a 3.5 kg ham, keep aside for 10 hours or 12 hours for a 7 kg)

  8. Pre-heat the oven to 220° Celsius

  9. Remove the ham from the cooking liquid

Glaze

  1. Place the ham in oven roasting pan

  2. Spread the mustard over the ham and press the sugar down in the mustard

  3. Bake until the mustard glaze have a caramel colour

  4. Serve with summer vegetables
