Crepes Suzette

Crepes Suzette is yet another delicious French dessert. I am very fond of the French Cooking. There are some people who doesn't like orange flavoured desserts, but this crepes Suzette recipe, as well as Japie se Gunsteling(baked orange pudding with a self-forming sauce- light and fluffy and absolutely delicious) are really really exceptional! The crepes itself is a quick and easy recipe to make and the sauce not difficult to make at all. Some people use orange liqueur such as Cointreau and this makes the sauce also very tasty. This particular sauce of my Crepes Suzette contain only the brandy to flambé, but feel free to try and experiment what works for you.

Ingredients

Pancakes

  • 220 g flour
  • 4 eggs
  • 400 ml milk milk, mixed with
  • 150 ml water
  • 1 pinch of salt

Orange Sauce

  • ½ cup caster sugar
  • juice and zest of 1 orange
  • ¼ cup water
  • 2 Tablespoons good quality brandy
  • 100 g butter

Method

Pancakes

  1. Mix the flour and salt together

  2. Whisk the water and the eggs together and add it to the flour mixture while whisking continuously.Ensure there is no lumps.Start baking the pancakes in a pan by adding some of the pancake batter in the frying pan

  3. Bake on low heat until bubbles form and turn around

  4. Bake again on the turned side

  5. Use spray and cook to spray after every 2nd or 3rd pancake

Orange Sauce

  1. Add the caster sugar, orange juice, orange zest and water together in a small saucepan

  2. Stir until the sugar has dissolved

  3. Lower the heat and simmer for 2-3 minutes

  4. Add the brandy and butter and simmer lightly until the sauce thickens and caramelizes

  5. Place the crepes all on top of each other and pour some of the delicious orange sauce over, or individually fold the crepe and pour some sauce over
