Bran, Raisin and Date Muffins

This delicious bran, raisin and date muffins recipe come a long way. I am very fond of this recipe we used to make at my very first job. We had a very large breakfast buffet with plenty of breakfast varieties, followed by a warm breakfast. The bran, raisin and date muffins are very healthy, perfect for lunch bin to work or a quick healthy snack after a work out session! Also a delicious healthy snack are the brown rusks- also containing bran as an ingredient, as well as the apple, ginger and cinnamon muffins.This is fantastic recipe to make and keep in the fridge for up to 5 days. You can bake fresh muffins every day, as long as the muffin mixture are kept in the fridge. A perfect start in the morning and an excuse for the kitchen to smell delicious!

Ingredients

  • 3¾ cups bran
  • 1½ cups boiling water
  • 1¼ cup vegetable oil
  • 5 eggs
  • 2½ cups brown sugar
  • 5 cups flour
  • 3¾ teaspoons bicarb of soda
  • 1½ teaspoons salt
  • 1 packet dates(250 g)
  • 1 cup raisins
  • 3½ cups milk

Method

  1. Preheat the oven to 180° Celsius

  2. Prepare the muffin tins with muffin cups or spray the pan well if not using muffin cups

  3. Pour the boiling water over the bran and allow to cool

  4. Add the rest of the ingredients, beating well after each addition

  5. Give the mix a good stir after all the ingredients are added together

  6. Fill each muffin cup about ¾ full and bake in the pre-heated oven for 15-20 minutes until a skewer comes out clean

  7. Enjoy warm with butter, apricot jam or cheddar cheese
